- Warm water
- Inulin Powder
- Dried instant yeast
- Shredded mozzarella
- Cream cheese
- Eggs
- Gluten free baking powder
- Xanthan gum
- Almond meal
- Vanilla
- Frozen blueberries
- Flaked almonds, for garnish
The Instructions:
- The first step you should do is to bring a small bowl and mix the warm water, inulin and yeast and cover it with cling paper and a towel to keep warm. Move the bowl to a warm place until the yeast is activated and foamy (15-20 minutes).
- In a large microwave-safe mixing bowl, combine the cream cheese and shredded mozzarella. (Put them in the microwave for 2 minutes on high)
- Now add both eggs and baking powder to the activated yeast mixture. (Mix all ingredients until well blended)
- Except for the blueberries, combine the remaining ingredients.
- Now transfer the dough to a silicone mat, and let it rest for 5 minutes.
- Gently fold the blueberries into the dough.
- Roll the dough into a ball (cut into 8 pieces).
- Next take each ball of dough in between your hands – push your finger through the center of each ball and using your fingers to gently widen the opening while pressing the outer edge and shaping it to be smooth and even.
- Place the bagels on a baking sheet that has been lined with parchment paper. Cover with a silicone mat and set aside for 1 hour in a warm place.
- Preheat the oven to 170°C.
- Now, before you put the bagels in the oven, beat the egg yolk well to grease the top of the bagels and sprinkle with a few flaked almonds.
- Bake these keto blueberry bagels for 15-20 minutes or until shiny golden.
