Well, I’m glad you asked this important question! A cookie cake is basically a large round cake that is baked in a traditional cookie mould.

It can be described as tending to be thicker than traditional cookies but thinner than a cake.

This cookie cake is a popular choice for children’s birthday parties and other simple parties, plus it can be made using very simple ingredients, really if you are one of those who love cookies a lot, today’s recipe you will love especially if you are on a keto diet, this The recipe is low in carbs so you’ll be able to enjoy it without feeling guilty.

How to make low-carb baked goods taste better

We can say that some inventions such as almond flavors and sweeteners such as stevia and erythritol have opened the possibilities for making many low-carb desserts, but these sweets sometimes we find that they still lack the original taste.

But in this keto cookie cake recipe, I tried to use a flavor that I could tell was the magic ingredient that made the cookie taste exactly the same as the original – and that ingredient is maple flavor.

How to make a keto cookie cake

Ingredients

Cookie Mixture:

  • Almond flour
  • Stevia erythritol blend sweetener
  • Butter (cold and cut into smaller pieces)
  • Eggs
  • Salt
  • Baking soda
  • Vanilla extract
  • Maple flavoring
  • Keto-Friendly Chocolate Chips

Frosting Mixture:

  • Cream cheese 
  • Butter
  • Sour cream
  • Stevia erythritol blend sweetener powdered
  • Vanilla extract

Instructions

It’s easy to make a low-carb keto cookie cake in two different ways: with a food processor or by hand – so try to decide which method you like best before you start making this delicious cake.

Cookie Mixture:

  1. In a medium bowl, whisk together the almond flour, sweetener, baking soda, and salt until all ingredients are combined.
  2. Cut the butter using a pastry cutter and add it to the dry ingredients and mix well until the mixture is completely coarse and crumbly.
  3. In the next step add the remaining ingredients (vanilla and maple flavor) and keep stirring the mixture until you get a dough-like consistency.
  4. In the final step, add the dark chocolate chunks until completely incorporated into the dough.
  5. Transfer the dough to the cake pan and straighten it little by little.
  6. Before adding the dough to the cake pan, You must:  Grease a 9-inch springform cake pan with butter or oil of choice.
  7. After all this, put the cake in the oven and bake for up to 18-22 minutes or until the edges of the cake are golden.
  8. Allow the delicious cake to cool slightly before adding a few garnishes of your choice.

Note: If you don’t let the keto cookie cake cool completely before transferring it to the cake plate, it will fall apart. So a great solution we recommend is to serve your cookie cake in the same cake pan.

Frosting Mixture:

  1. In a small bowl, add the butter and cream cheese, then mix well until you get a smooth creamy mixture (using a hand mixer).
  2. Next, add the rest of the ingredients (sour cream, sweetener and vanilla extract) and mix until all the ingredients are well combined – don’t forget to taste the smooth mixture to adjust the sweetness if desired.

How to prevent keto cookie cake from sticking to the pan

The easiest way to avoid this is to use a springform pan and brush it with your favorite oil or butter.

If you are using a regular cake pan, we recommend that you line the cake pan with parchment paper and spray it with a little oil of your choice.

  • 2 cups Almond Flour  ((It should be fine and finely ground))
  • 1/2 cup Granulated Stevia Erythritol Blend Sweetener
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 4 tbsp Butter ((It should be cool and cut into smaller pieces))
  • 2 large Eggs
  • 2 tsp Vanilla extract
  • 1/2 tsp Maple flavoring
  • 3 oz Keto-Friendly Chocolate Chips

Frosting Mixture:

  • 3 oz Cream Cheese ((room temperature))
  • 1 tbsp Butter ((room temperature))
  • 1 tbsp Sour cream
  • 2 tsp Stevia Erythritol Blend Sweetener ((powdered))
  • 1/2 tsp Vanilla Extract

Cookie Mixture:

  1. The oven should be heated to 350 degrees Fahrenheit (°F).

  2. In a medium bowl, whisk all ingredients (almond flour, baking soda, sweetener, salt ) until well blended.

  3. Cut the butter using a pastry cutter and add it to the dry ingredients and mix well until the mixture is completely coarse and crumbly.
