  • Granulated sweetener of choice: But i highly recommend Lakanto brand monk fruit sweeteners.
  • Egg: Room temperature eggs.

The Instructions:

  • The first step you should do is line a large baking tray with parchment paper and set it aside.
  • In a large mixing bowl, add all of your ingredients at once and mix well until the peanut butter mixture is smooth and thick.
  • Now all you have to do is form 12 small balls of dough (using a cookie scoop) and place them directly on the pre-lined tray. Each ball of cookie dough should be pressed into a circular form before being pressed down with a fork.
  • Bake for 10 to 12 minutes, or until golden brown around the edges. Allow cookies to cool completely after removing them from the oven. If desired, dip in chocolate.
