When it comes to delicious keto lemon recipes, some of my favorite recipes are lemon cheesecake, lemon bars, and these easy lemon crinkle cookies.

Sometimes I find people who say they are not fans of lemon desserts. This baffles me terribly!!!

Actually, guys, I can’t express how amazing lemon desserts (especially the taste) are – some people think that such recipes will be too sour. On the other hand, the taste of lemon balances out the sweetness of whatever you make or pair with it.

So, if you’re one of those people, I’m going to tell you that you have to believe me because you’re going to adore my Keto Lemon Cookies recipe.

Because these Keto Lemon Cookies are soft and delicious cookies full of sweet lemon flavor!
As for the texture, it has thin edges and melts in the mouth quickly!
It only takes 15 minutes to make and is made in just one bowl! For each cookie, there are 2 grams of net carbs.

Not only that, but you can prepare it without the need for dairy products or sugar.

How do you make keto lemon cookies?

The Ingredients

  • Almond flour– Blanched or Superfine almond flour. (I recommend avoiding using almond meal, as it leads to a gritty and thick cookie.)
  • Sweeteners – Either monk fruit sweetener or erythritol can be used. Monk fruit sweetener is my favorite because it is similar to white sugar in texture and flavor.
  • Salt – always brings out the sweetness of all the other ingredients.
  • Lemon zest – Important in this recipe because it adds an extra lemon flavor.
  • Egg whites 
  • Lemon extract– To intensify the lemon flavor in the cookies.
  • Yellow food coloring– optional but adds a beautiful color.
  • Sugar-free powdered sugar– To cover the cookies with. I used keto powdered sugar.

The Instructions

In a large mixing bowl, mix well all dry ingredients.
In another bowl, beat the egg whites well until soft peaks form. Add lemon extract and yellow food coloring if using.

Next, use a rubber spatula and fold in all the dry ingredients until a sticky and thick dough forms at the same time.

Now, get a baking tray and put a lined baking sheet on it…And in a shallow bowl place your powdered sweetener.

After that, you must use a ONE tablespoon cookie SCOOP, form heaping scoops of cookie dough and roll them in the sweetener.

After you’ve completed this simple stage, bake the Keto Lemon Cookies for about 15 minutes, until the tops are cracked and the edges are somewhat golden.

Allow cooling completely before sprinkling with additional extra powdered sugar.

Tips to make the best keto lemon cookies

  1. Unlike classic lemon cookies, these lemon cookies will not spread too much. As a result, lightly press down on the cookies when placing them on the baking sheet.
  2. It is best to avoid touching the dough balls while they are covered in the sweetening powder. This can result in overly sweet keto lemon cookies, and you’ll have to sprinkle more sweetener on top of the cookies after they’ve baked.
  3. Do not overbake your cookies.
  4. The egg whites should be at room temperature; if they are chilled, they may dry out, which is not ideal for this recipe.
  5. It’s a really moist and sticky batter. Use a cookie scoop to scoop out the dough and set it on the baking sheet for the best results.

How to store and freeze keto lemon cookies

For these lemon keto cookies to stay soft, you should store them in an airtight plastic container and only keep them for up to a week at room temperature.
If you want to keep it longer, I recommend you refrigerate it.

To freeze cookies, place them in a ziplock bag and keep them in the freezer for up to 6 months.

Lemon is definitely 100% keto certified and anyone following this diet should eat it. Because lemons contain very few net carbohydrates.
Lemon also contains about 3 grams of dietary fiber per 100 grams.

Furthermore, lemons have a high water content, which means that you get a good amount of food volume without consuming a lot of carbs or calories.

Lemon is known to be a good source of Vitamin C and as we all know, it has a plethora of health benefits.

So including lemon to make your new keto cookies is a good idea.

Keto Lemon Cookies Recipe

Keto Lemon Cookies

These Keto Lemon Cookies are low carb and sugar-free!! You can prepare it in just 15 minutes with simple ingredients!

  • 2 Cups Almond Flour ((blanched or superfine))
  • 1/4 Tsp Salt
  • 1 Cup You can use erythritol or monk fruit sweetener
  • 2 Tbsp lemon zest
  • 2 Large Egg Whites Room Temperature
  • 1 Tsp Lemon Extract
  • 1-2 Drops Yellow Food Coloring ((optional))
  • 1/4 Cup Sugar Free Powdered Sugar
  1. For this recipe, you will need to preheat the oven to 180°C/350°F – then lay out the parchment paper on a large baking sheet.

  2. Combine all of your dry ingredients in a large mixing bowl and mix thoroughly.

    Take another mixing bowl, and beat the egg whites until well-formed soft peaks.

    Combine the lemon extract and yellow food coloring in a mixing bowl. After All, Gently incorporate the dry ingredients into the wet mixture until everything is well blended.

  3. Also, in another bowl, add the sugar-free icing sugar.

    After that, you must use a ONE tablespoon cookie SCOOP, form heaping scoops of cookie dough and roll them in the sweetener. Continue until all of the cookie dough balls are covered.

  4. Bake the keto lemon cookies for 15 minutes, or until the edges are golden brown and the tops are cracking.

  5. Remove the cookie tray from the oven and set it aside to cool completely.
