Definitely – tomatoes are allowed on the keto diet, despite being classified as a fruit in botany, but they contain a small amount of carbohydrates compared to other fruits, as 100 grams of tomatoes contain about 2-3 grams of net carbohydrates, in addition to being rich in fiber that very useful for all types of diets, not just the keto diet alone.

What ingredients do you need to make this homemade keto tomato soup?

You’ll be happy to know that this recipe requires only a few ingredients and can be prepared in less than 21 minutes.

  • Chopped roma tomatoes: Roma tomatoes are the best choice for this recipe, as they help make the texture thick and contain relatively few seeds.
  • Chicken broth: This helps to enhance the flavor of the keto tomato soup.
  • Heavy whipping cream: This is an irreplaceable ingredient in this recipe, as it makes the tomato soup really creamy and adds volume.
  • Olive oil: For sautéing.
  • Chopped onion: Definitely necessary in this recipe.
  • Cloves garlic: Garlic enhances tomato flavors without adding all those unnecessary carbohydrates.
  • Salt
  • Cumin

  • The first step is to chop the onions and tomatoes, as well as mince the garlic.

  • Next add the chopped tomatoes and let it boil a bit, at this time add all the spices including black pepper, cayenne pepper, smoked paprika and cumin and stir.
  • Now the mixture should simmer for 5 minutes over medium-low heat. Then add the chicken broth and cook for another 10 minutes, or until the tomatoes are cooked well.
  • Now add the heavy whipping cream to the mixture and stir everything together.
  • Pour the tomatoes into the blender and puree until smooth. Pour the soup back into the saucepan and adjust the seasoning of desired. Because broth contains salt, I always add it last.
  • Simmer till you reach your desired consistency. (Usually, letting the soup simmer on the stove for a few minutes makes it thicker. But you can skip this step if you are in a hurry)
